Pineapple Upside Down Donuts

OH man. This is one recipe I cannot wait to share with you!

For one, it’s all mine baby. I totally came up with this idea on the fly, and I am so happy I did! So so so happy i did! I was going to try to make pineapple upside down pancakes, but then I thought “pineapple upside down donuts? YEAH”. They are pretty easy too. And delicious. And it only makes 6 so you don’t eat 12 donuts in 1 sitting. Although you could easily double it if you are willing to risk it.

Here we go folks!

Pineapple upside down donut

1 cup all-purpose flour
1/3 cup white sugar
1 tsp. baking powder
few sprinkles nutmeg
1/2 tsp. salt
1/2 c buttermilk
1 tbsp. melted butter
1 egg lightly beaten
1/3 – 1/2 cup fresh pineapple, cut into small pieces
1/4 cup brown sugar
2 tbsp butter

Heat oven to 350 degrees.

Combine flour, white sugar, baking powder, nutmeg and salt in a large bowl. Add buttermilk, (I used milk with ½ tbsp. lemon juice, let it sit for 5 minutes), egg, and melted butter. Beat until just combined. Set aside.

Spray the pan with oil and then lay pineapple chunks in bottom of donut mold to cover the bottom of each donut. In a small frying pan, melt butter and add ¼ c brown sugar, let it caramelize and then pour evenly on top of pineapple.

Pour batter on top and bake for 20 minutes, or until tops of donuts are set. Place a plate on top and then flip the plate and pan at the same time to release the donuts right side up on the plate! Enjoy these DELICIOUS treats!

Homemade Sweet Potato Fries

Mmm… do I have a delicious recipe for you today! I’m obsessed with these. Especially with GUK! Easy to make, yummy to eat, and not too bad for you either! You are going to love these.

1. Preheat the oven to 425 degrees and slice the sweet potato(es) into thin strips.

2. Mix with 1 tbsp olive oil, 1/2 tsp sea salt, 1/2 tsp sugar, 1 tsp paprika and toss to coat.

3. Cover your baking sheet with tinfoil to prevent a difficult clean – up, and lay in a single layer.

4. Bake for 15 mins, flip the fries, bake for another 10.

Ta-da! Yummy :3

Sweet potatoes taste great and are a huge source of Vitamin A, C, and iron!

Ingredients

I started my day off today with my first ever salad eaten for breakfast. Yeah I dunno I never do that but today I really wanted this salad. It’s avocado, mango, walnuts, and an olive oil/ lemon / walnut / s + p dressing. Super simple and quite good! I used less oil and it was still too much! I think I should have had more spinach but oh well. It filled me up for a long time. It’s the Mango and Walnut Salad from GreenKitchenStories.

I also continued knitting the Lapis as a good girl should. Although there’s just one thing…

I’m really running out of yarn! Good thing another cone is in the mail on it’s way here. Bad thing, it’s date for arrival is the deadline of this test knit! And oh my, guess what! I just checked the tracking online and it says they tried to deliver it to me today! Sweeeet. So glad I ordered it right when I did. This is the bonus of ordering from a canadian website, and actually why I went with elann in the first place!

I also got this in the mail today, which makes me very happy. The ipod case is adorable (owl!) and I love all of the buttons. I don’t have anything specific planned for even one of these buttons…but I don’t care. I wanted them. and I will find uses! These are from heydayhandmade

owlmazing makes…hearty vegetable chowder

I figured I should start living up to my “subtitle”. AKA…owlmazing makes….FOOD! I actually love photographing food as well as knitting so I thought I would share the soup I made last week, seeing as it was DELISH! I followed Sweet And Savoury Kitchen’s recipe exactly. Only I used about double the potato because my potato was big and i did not want to waste it!

Also since we’re here, might as well mention that I’m trying to eat more soups (AKA VEGETABLES) to fit in with my healthy lifestyle. Bacon, potatoes, etc… this soup is still healthy in my eyes 😉 And since  I haven’t made an SFS update in a while I just wanted to say I’m still working it! Right now I am doing the 30 day challenge on Bodyrock.tv. Check that out! I hope to follow it exactly 1 week behind and if I do the final day will be on my 21st birthday 🙂
