Pineapple Upside Down Donuts

OH man. This is one recipe I cannot wait to share with you!

For one, it’s all mine baby. I totally came up with this idea on the fly, and I am so happy I did! So so so happy i did! I was going to try to make pineapple upside down pancakes, but then I thought “pineapple upside down donuts? YEAH”. They are pretty easy too. And delicious. And it only makes 6 so you don’t eat 12 donuts in 1 sitting. Although you could easily double it if you are willing to risk it.

Pineapple upside down donut

1 cup all-purpose flour
1/3 cup white sugar
1 tsp. baking powder
few sprinkles nutmeg
1/2 tsp. salt
1/2 c buttermilk
1 tbsp. melted butter
1 egg lightly beaten
1/3 – 1/2 cup fresh pineapple, cut into small pieces
1/4 cup brown sugar
2 tbsp butter

Heat oven to 350 degrees.

Combine flour, white sugar, baking powder, nutmeg and salt in a large bowl. Add buttermilk, (I used milk with ½ tbsp. lemon juice, let it sit for 5 minutes), egg, and melted butter. Beat until just combined. Set aside.

Spray the pan with oil and then lay pineapple chunks in bottom of donut mold to cover the bottom of each donut. In a small frying pan, melt butter and add ¼ c brown sugar, let it caramelize and then pour evenly on top of pineapple.

Pour batter on top and bake for 20 minutes, or until tops of donuts are set. Place a plate on top and then flip the plate and pan at the same time to release the donuts right side up on the plate! Enjoy these DELICIOUS treats!
